Ingredients



  • For the Dough:


    • 2 cups all-purpose flour

    • 1/4 cup oil or ghee

    • 1/2 tsp salt

    • Water as needed for kneading


  • For the Filling:


    • 3 medium potatoes, boiled and diced

    • 1/2 cup green peas (fresh or frozen)

    • 1 green chili, finely chopped

    • 1 tsp ginger, grated

    • 1/2 tsp cumin seeds

    • 1/2 tsp coriander powder

    • 1/2 tsp garam masala

    • 1/2 tsp turmeric powder

    • 1/2 tsp red chili powder

    • Salt to taste

    • Fresh coriander leaves, chopped (for garnish)

    • Oil for deep frying

Cooking Process



  1. Step 1: Prepare the Dough:

    • In a mixing bowl, combine all-purpose flour, salt, and oil. Rub the oil into the flour until the mixture is crumbly.

    • Add water gradually and knead to form a firm, smooth dough. Cover and let it rest for 20 minutes.



  2. Step 2: Prepare the Filling:

    • Heat a small amount of oil in a pan over medium heat.

    • Add cumin seeds and let them sizzle, then add ginger and green chili, and sauté for a minute.

    • Add the diced potatoes, green peas, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Stir well.

    • Cook the filling for 5-7 minutes, stirring occasionally, then garnish with fresh coriander. Set aside to cool.



  3. Step 3: Shape the Samosas:

    • Divide the dough into equal portions and roll each portion into a small ball.

    • Roll each ball into a thin oval or circle, then cut it in half to form two semi-circles.

    • Form each semi-circle into a cone shape by sealing the straight edge with water. Fill the cone with the potato mixture and seal the top edge by pressing it closed.



  4. Step 4: Fry the Samosas:

    • Heat oil in a deep pan over medium heat.

    • Fry the samosas in batches until they are golden brown and crispy, about 6-8 minutes per batch.

    • Remove and drain on paper towels.



  5. Serve:

    • Serve hot with mint chutney or tamarind chutney on the side.







Optional Variation


For extra flavor, add crushed fennel seeds or amchur powder to the filling, or try a paneer and mixed vegetable filling as an alternative.
