Ingredients



  • 1 cup khoya (milk solids), grated

  • 1/4 cup all-purpose flour

  • 1/4 tsp baking soda

  • 2 tbsp milk (as needed to knead)

  • Oil or ghee for deep frying

  • For Sugar Syrup:


    • 1 1/2 cups sugar

    • 1 1/2 cups water

    • 1/4 tsp cardamom powder

    • Few saffron strands (optional)

    • 1/2 tsp rose water or kewra essence (optional)

Cooking Process



  1. Step 1: Prepare the Sugar Syrup:

    • In a saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves.

    • Add cardamom powder, saffron strands (if using), and rose water or kewra essence. Simmer for 5-7 minutes, then set aside.



  2. Step 2: Make the Dough:

    • In a mixing bowl, combine grated khoya, all-purpose flour, and baking soda.

    • Add milk gradually and knead gently to form a smooth dough. Avoid over-kneading.



  3. Step 3: Shape the Gulab Jamuns:

    • Divide the dough into small portions and roll each into a smooth ball without cracks.



  4. Step 4: Fry the Gulab Jamuns:

    • Heat oil or ghee in a deep pan over low-medium heat.

    • Fry the balls in batches, stirring gently until they are golden brown, about 6-8 minutes per batch.

    • Remove and drain on paper towels.



  5. Step 5: Soak in Sugar Syrup:

    • Warm the sugar syrup if it has cooled down.

    • Soak the fried gulab jamuns in the syrup for at least 1-2 hours to allow them to absorb the syrup fully.



  6. Serve:

    • Serve warm or at room temperature, garnished with saffron strands or crushed nuts if desired.







Optional Variation


For a unique twist, try adding a pinch of cinnamon or orange zest to the syrup, or stuff each ball with a small piece of pistachio or almond before frying.
