Ingredients



  • 4 large russet potatoes

  • Salt to taste

  • Cold water (for soaking)

  • Vegetable oil for frying

  • Optional: seasonings like paprika, garlic powder, or black pepper

Cooking Process



  1. Step 1: Prepare the Potatoes:

    • Peel the potatoes (if desired) and cut them into 1/4-inch thick strips.

    • Place the cut potatoes in a large bowl and cover with cold water. Soak for at least 30 minutes to remove excess starch.



  2. Step 2: Preheat Oil:

    • In a deep pan or fryer, heat vegetable oil to 325°F (165°C) for the first fry.



  3. Step 3: First Fry (Blanching):

    • Drain and pat the potatoes dry with a towel.

    • Working in batches, fry the potatoes for 3-4 minutes until they are soft but not browned.

    • Remove the fries and drain on paper towels. Let them cool completely.



  4. Step 4: Second Fry (Crisping):

    • Increase the oil temperature to 375°F (190°C).

    • Fry the blanched potatoes a second time for 2-3 minutes until golden brown and crispy.

    • Drain on paper towels and immediately sprinkle with salt and optional seasonings.



  5. Serve:

    • Serve hot with your favorite dipping sauces, like ketchup or aioli.







Optional Variation


For extra flavor, toss the fries with truffle oil and grated Parmesan after frying, or try seasoning with Cajun spices for a spicy kick.
