Ingredients



  • 4 medium potatoes, boiled and mashed

  • 1 cup cauliflower, finely chopped

  • 1/2 cup green peas

  • 1/2 cup carrots, finely chopped

  • 1 large onion, finely chopped

  • 1 large tomato, finely chopped

  • 1 green bell pepper, finely chopped

  • 1 tbsp ginger-garlic paste

  • 2 green chilies, finely chopped

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 2 tsp pav bhaji masala

  • 1/4 cup butter (or oil for cooking)

  • Salt to taste

  • Fresh coriander for garnish

  • 8 pav (soft bread rolls)

  • Butter for toasting pav

  • Lemon wedges for serving

Number of servings: 4-5 (about 1 cup of bhaji per serving)





Cooking Process



  1. Step 1: Prepare the Vegetables:

    • Boil the potatoes, cauliflower, green peas, and carrots until soft.

    • Drain and mash the boiled vegetables, leaving a bit of texture.



  2. Step 2: Sauté the Onion and Tomato:

    • In a large pan, melt 2 tbsp of butter over medium heat.

    • Add the chopped onion and sauté until translucent.

    • Add ginger-garlic paste and green chilies; cook until the raw smell disappears.

    • Stir in the chopped tomatoes and cook until they turn soft and blend with the onions.



  3. Step 3: Add Spices and Vegetables:

    • Add turmeric powder, red chili powder, and pav bhaji masala. Mix well and cook for 1-2 minutes.

    • Add the mashed vegetables and salt, stirring to combine with the spices.



  4. Step 4: Cook the Bhaji:

    • Add 1/2 cup of water to reach the desired consistency, and let it simmer for 10 minutes, stirring occasionally.

    • Use a potato masher to further mash the bhaji to a smooth consistency, if preferred.



  5. Step 5: Toast the Pav:

    • In a separate pan, melt a small amount of butter.

    • Slice each pav and toast in the butter until golden brown on both sides.



  6. Serve:

    • Garnish the bhaji with fresh coriander leaves and a squeeze of lemon juice.

    • Serve hot with buttered pav, extra lemon wedges, and chopped onions on the side.







Optional Variation


For added flavor, sprinkle chaat masala or a little extra pav bhaji masala on top before serving.
