Ingredients



  • 2 cups cooked rice, cooled

  • 2 tbsp oil

  • 1/2 cup chopped carrots

  • 1/2 cup chopped bell peppers

  • 1/2 cup chopped cabbage

  • 1/4 cup green peas

  • 2 green onions, chopped

  • 2-3 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp vinegar

  • Salt to taste

  • Freshly ground black pepper (optional)

Cooking Process



  1. Step 1: Prepare the Vegetables:

    • Heat oil in a large pan or wok over medium-high heat.

    • Add garlic and stir-fry until golden and fragrant.

    • Add chopped carrots, bell peppers, cabbage, and green peas.

    • Stir-fry the vegetables for 3-4 minutes until slightly tender but still crisp.



  2. Step 2: Add Rice and Seasonings:

    • Reduce the heat slightly, add the cooked rice, and mix gently.

    • Pour in soy sauce and vinegar, and add salt to taste.

    • Toss the rice and vegetables until everything is evenly coated and heated through.



  3. Step 3: Add Green Onions and Serve:

    • Add chopped green onions and a dash of black pepper, if desired.

    • Mix well and turn off the heat.



  4. Serve:

    • Serve the veg fried rice hot, garnished with additional green onions if desired.







Optional Variation


Add scrambled tofu or paneer cubes for added protein and flavor.
