Ingredients



  • 1 cup rice

  • 1/4 cup urad dal (split black gram)

  • 1/4 tsp fenugreek seeds (optional)

  • Salt to taste

  • Water as needed

  • Oil for greasing

Cooking Process



  1. Step 1: Soak the Ingredients:

    • Rinse rice and urad dal together. If using fenugreek seeds, add them to the mixture.

    • Soak the rice and dal mixture in water for 4-6 hours or overnight.



  2. Step 2: Prepare the Batter:

    • Drain the soaked ingredients and blend them into a smooth batter, adding water as needed.

    • Transfer the batter to a bowl, add salt, and mix well.

    • Let the batter ferment in a warm place for 8-10 hours or overnight until it rises and becomes airy.



  3. Step 3: Steam the Idlis:

    • Grease the idli molds with a little oil to prevent sticking.

    • Pour the batter into each mold, filling about 3/4 full.

    • Place the molds in a steamer and steam for 10-12 minutes, or until a toothpick comes out clean.



  4. Serve:

    • Remove the idlis from the molds and serve hot with chutney and sambar.







Optional Variation


Add a pinch of baking soda to the batter before steaming for extra fluffy idlis.
