Ingredients



  • 1 cup rice, cooked and cooled

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • 2 dried red chilies

  • 1/4 tsp asafoetida (hing)

  • 1 sprig curry leaves

  • 2 green chilies, slit

  • 1/4 cup peanuts

  • 1/4 tsp turmeric powder

  • Salt to taste

  • 1 lemon, juiced

Cooking Process



  1. Step 1: Prepare the Tempering:

    • Heat 2 tbsp oil in a pan over medium heat.

    • Add mustard seeds and let them splutter.

    • Add cumin seeds, dried red chilies, asafoetida, and curry leaves.

    • Fry until the spices release their aroma.



  2. Step 2: Add Peanuts and Green Chilies:

    • Add the peanuts and fry until golden brown.

    • Add slit green chilies and turmeric powder, and fry for a few more seconds.



  3. Step 3: Combine with Rice:

    • Reduce the heat and add the cooked rice.

    • Mix gently until the rice is coated with the tempered spices.

    • Season with salt to taste.



  4. Step 4: Add Lemon Juice:

    • Turn off the heat and add lemon juice.

    • Mix well to evenly distribute the flavors.



  5. Serve:

    • Serve the pulihora warm or at room temperature.







Optional Variation


Add a pinch of grated coconut or roasted sesame powder to enhance the flavor.
