Ingredients



  • 1 cup split pigeon peas (toor dal)

  • 1 tsp turmeric powder

  • 1 small onion, chopped

  • 2 medium tomatoes, chopped

  • 1/2 cup diced vegetables (carrot, drumstick, pumpkin, etc.)

  • 1 tbsp tamarind paste

  • 2 tbsp sambar powder

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1/4 tsp asafoetida (hing)

  • 2 dried red chilies

  • 10 curry leaves

  • 2 tbsp oil

  • Salt to taste

  • Fresh coriander for garnish

Cooking Process



  1. Step 1: Prepare the Toor Dal

    • Rinse the toor dal thoroughly and pressure cook with 2 cups of water, turmeric powder, and a pinch of salt for 3-4 whistles, or until soft.

    • Once cooked, mash the dal and set aside.



  2. Step 2: Cook the Vegetables

    • In a medium pan, heat 1 tbsp oil over medium heat.

    • Add the chopped onions and sauté until translucent.

    • Stir in the chopped tomatoes and cook until soft.

    • Add the diced vegetables and cook for 5 minutes, stirring occasionally.



  3. Step 3: Make the Sambar

    • To the cooked vegetables, add sambar powder, tamarind paste, and salt to taste.

    • Pour in 2 cups of water and bring to a boil. Simmer until the vegetables are tender.

    • Stir in the cooked dal and simmer for 10 minutes until well combined.



  4. Step 4: Temper the Sambar

    • In a small pan, heat 1 tbsp oil and add mustard seeds, cumin seeds, dried red chilies, curry leaves, and asafoetida.

    • Once the mustard seeds splutter, pour the tempering into the sambar and stir well.



  5. Serve

    • Remove from heat and garnish with fresh coriander leaves.

    • Serve hot with soft idlis and a side of coconut chutney.







Optional Variation


For a spicier version, increase the amount of sambar powder or add a green chili while cooking the vegetables.
