Ingredients



  • 1 cup dosa batter (store-bought or homemade)

  • 2 large eggs

  • 1 small onion, finely chopped

  • 1 green chili, finely chopped (optional)

  • 1 tbsp fresh coriander leaves, chopped

  • Salt to taste

  • 1/4 tsp black pepper

  • 1/4 tsp red chili powder (optional)

  • 1 tbsp oil or ghee for cooking

Cooking Process



  1. Step 1: Prepare the Egg Mixture:

    • In a bowl, crack the eggs and beat them well.

    • Add the chopped onion, green chili, coriander leaves, salt, black pepper, and red chili powder. Mix everything together.



  2. Step 2: Heat the Pan:

    • Heat a non-stick tawa or flat pan over medium heat and drizzle 1/2 tbsp of oil or ghee.



  3. Step 3: Spread the Dosa Batter:

    • Pour a ladle of dosa batter onto the hot tawa and spread it evenly in a circular motion to form a thin layer.

    • Cook the dosa for 1-2 minutes until the edges start to lift slightly.



  4. Step 4: Add the Egg Mixture:

    • Pour the prepared egg mixture evenly over the dosa.

    • Use a spatula to gently spread the mixture across the dosa.

    • Cook for another 2-3 minutes until the egg sets and is fully cooked.



  5. Step 5: Flip and Cook:

    • Carefully flip the dosa and cook the other side for 1-2 minutes until crispy and golden.



  6. Serve:

    • Remove the dosa from the pan and serve hot with coconut chutney or sambar.







Optional Variation


Add grated cheese or chopped vegetables like tomatoes and bell peppers to the egg mixture for a more filling egg dosa.
