Cooking Process

  1. Step 1: Prepare the Onion Mix:

    • In a large bowl, add the thinly sliced onions, green chilies, cumin seeds, red chili powder, turmeric powder, asafoetida, and salt.

    • Mix well and let the mixture sit for about 5-10 minutes to allow the onions to release moisture.

  2. Step 2: Make the Batter:

    • Add the gram flour and baking soda to the onion mixture. Gradually add water, mixing until a thick batter forms.

    • The batter should be thick enough to coat the onions but not too runny.

  3. Step 3: Heat the Oil:

    • Heat oil in a deep frying pan over medium heat, aiming for a temperature of around 350°F (175°C).

  4. Step 4: Fry the Pakodis:

    • Take small portions of the onion batter and carefully drop them into the hot oil.

    • Fry in batches, turning occasionally for even cooking, until the pakodis are golden brown and crispy.

    • Remove them with a slotted spoon and drain on paper towels to remove excess oil.

  5. Step 5: Serve:

    • Serve the hot onion pakodis with green chutney or tomato ketchup.

Optional Variation

Add finely chopped spinach or mint leaves to the batter for extra flavor and nutrition.
