Ingredients



  • 8-10 large green chilies (like Bhavnagari or banana peppers)

  • 1 cup gram flour (besan)

  • 1/4 cup rice flour (for added crispiness)

  • 1/2 tsp carom seeds (ajwain)

  • 1/4 tsp baking soda

  • 1/2 tsp salt, or to taste

  • 1/2 tsp red chili powder (optional, for a spicier batter)

  • Water, as needed (for batter consistency)

  • Oil, for deep frying

  • Optional:

    • Chaat masala, for garnish

    • Lemon wedges, for serving

Cooking Process



  1. Step 1: Prepare the Green Chilies:

    • Wash the green chilies and pat them dry. Make a slit along the length of each chili, being careful not to cut all the way through.

    • If desired, remove the seeds for a milder taste.



  2. Step 2: Prepare the Batter:

    • In a mixing bowl, combine the gram flour, rice flour, carom seeds, baking soda, salt, and red chili powder.

    • Add water gradually to form a thick, smooth batter that coats the back of a spoon. The batter should be thick enough to adhere to the chilies without dripping off.



  3. Step 3: Heat the Oil:

    • In a deep frying pan, heat oil over medium heat. The oil should be around 350°F (175°C) for deep frying.



  4. Step 4: Coat and Fry the Chilies:

    • Dip each chili into the batter, coating it evenly.

    • Carefully place the batter-coated chilies into the hot oil in small batches.

    • Fry for 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking.

    • Use a slotted spoon to remove the bajjis and drain them on paper towels to remove excess oil.



  5. Step 5: Season and Serve:

    • Sprinkle chaat masala on top for added flavor.

    • Serve hot with lemon wedges, mint chutney, or tamarind chutney, and enjoy!





Optional Variation


For stuffed mirapakaya bajji, add a filling of mashed potatoes or paneer with spices like chaat masala and cumin powder before coating in batter and frying.
