Ingredients



  • 1 cup rice (preferably idli rice)

  • 1/4 cup split urad dal (black gram)

  • 1/4 tsp fenugreek seeds

  • 1/2 cup poha (flattened rice), optional for crispiness

  • Salt to taste

  • Oil for cooking dosas


For the Potato Filling



  • 3-4 medium potatoes, boiled and mashed

  • 1 medium onion, sliced

  • 1-2 green chilies, finely chopped

  • 1/2 tsp mustard seeds

  • 8-10 curry leaves

  • 1/4 tsp turmeric powder

  • Salt to taste

  • 2 tbsp oil

  • Fresh coriander leaves for garnish

Cooking Process



  1. Step 1: Prepare the Dosa Batter:

    • Wash and soak rice, urad dal, and fenugreek seeds together for 4-5 hours.

    • Soak the poha separately for about 30 minutes before blending (optional).

    • Grind the soaked ingredients to a smooth batter, adding water as needed.

    • Mix in salt, cover, and let the batter ferment in a warm place for 8-12 hours or overnight.



  2. Step 2: Prepare the Potato Filling:

    • Heat 2 tbsp oil in a pan over medium heat.

    • Add mustard seeds and let them splutter, then add curry leaves and green chilies.

    • Sauté the onions until they turn translucent.

    • Add turmeric powder, mashed potatoes, and salt. Mix well and cook for 2-3 minutes.

    • Garnish with fresh coriander leaves and set aside.



  3. Step 3: Cook the Dosa:

    • Heat a non-stick or cast-iron skillet over medium-high heat and grease lightly with oil.

    • Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin dosa.

    • Drizzle a little oil around the edges and cook until golden brown and crispy.

    • Place a spoonful of potato filling on one side of the dosa and fold it over.



  4. Serve:

    • Serve hot with coconut chutney and sambar for a complete South Indian meal.







Optional Variation


For extra crispy dosas, add a little rice flour to the batter before making dosas. Alternatively, a pinch of sugar can help the dosa brown beautifully on the skillet.
