Ingredients



  • 4 large chicken drumsticks or thighs

  • 2 tbsp vegetable oil or melted butter

  • Fresh coriander leaves for garnish

  • For the Marinade:


    • 1 cup plain yogurt

    • 2 tbsp lemon juice

    • 1 tbsp ginger-garlic paste

    • 1 tsp red chili powder

    • 1/2 tsp turmeric powder

    • 1 tsp garam masala

    • 1 tsp cumin powder

    • 1/2 tsp coriander powder

    • Salt to taste

    • 1/4 tsp red food color (optional, for traditional look)

Cooking Process



  1. Step 1: Prepare the Marinade:

    • In a large mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric, garam masala, cumin, coriander powder, salt, and optional red food color.

    • Mix well to form a smooth marinade.



  2. Step 2: Marinate the Chicken:

    • Make small cuts on the chicken pieces to help the marinade penetrate better.

    • Coat the chicken pieces well with the marinade, cover, and refrigerate for at least 2 hours or preferably overnight.



  3. Step 3: Preheat the Grill or Oven:

    • Preheat your grill or oven to 400°F (200°C).

    • If using an oven, place the chicken on a lined baking sheet or wire rack.



  4. Step 4: Cook the Tandoori Chicken:

    • Brush the chicken with a little oil or melted butter for added flavor.

    • Grill or bake for 25-30 minutes, turning halfway, until the chicken is fully cooked and slightly charred.

    • Check for doneness by ensuring the internal temperature reaches 165°F (74°C).



  5. Serve:

    • Garnish with fresh coriander leaves and serve hot with lemon wedges and mint chutney on the side.







Optional Variation


For a smoky flavor, use the dhungar method: place a burning charcoal piece in a small bowl, set it in the marinade, add a few drops of oil over the coal, and cover the bowl to let the smoke infuse for a few minutes before cooking.
